Carrot, orange and walnut cake with a mascarpone and cream cheese icing


A moist, two-layer cake made with wheat flour, free-range eggs, whole milk, demerara sugar, butter,  freshly grated carrots, orange zest, orange juice and chopped walnuts. Ground cinammon, nutmeg, ginger, cloves and natural vanilla extract provide the spicing. Covered and filled with a luxurious mascarpone and cream cheese icing and decorated with miniature carrots made from buttercream and walnut pieces. 23 cm./ 9 inch diameter cake which serves 14-16 slices. Baked on the day of the order, sealed in an airtight container and chilled until delivery the next day.
